Last fall, after a year of debating whether or not I wanted to splurge on a pasta extrusion machine, I bit the bullet and placed my order. A few weeks later, my Arcobaleno Vita arrived. I’ve been making pasta for years using a rolling pin, a manual pasta machine and Kitchen-Aid pasta attachments. These are great methods for making sheeted pasta like lasagna, fettucine, and linguine. The Arcobaleno allows you to enter bronze-die extrusion and a new world of shapes.
My first die purchased was the mafalde die. (Arcobaleno Vita die catalog) This was a fun way to start my new world of pasta making and a great pasta to grab onto sauce. More to come on my pasta journey! For now, here’s the outcome of my first extrusion!
