Mozzarella di Buffala

Fresh mozzarella is a thing of beauty. Here in Wisconsin, we tend to see Begioioso on the shelf at the grocery store. A good product but not what I’d consider the real thing. A few years ago, we found a brand called buf, This product was quite good and I was sad to see it disappear.

A few weeks ago, after a store manager meeting in Chicago, we held a small tasting of fresh Italian cheeses. We’ve been looking for some new cheeses to introduce to customers and found some amazing products. From ricotta to mozzarella di buffala, we ate our way through so many different brands. At the end of this session, I was offered a four-pack plastic bag of what was to become the most amazing fresh mozzarella I’ve had.

So who is this amazing producer? You may have already heard of it. Stanley Tucci found them and highlighted in his recent food series on CNN. Not sure we’ll be able to bring this to our stores, Caseificio il Casolare’s mozzarella di buffala is worth having at least once in your life. Here are some of the amazing meals I made with this great product!
